Making a sourdough starter: 
Mix 60 g of flour and 60 g of lukewarm water in a clean jar. Cover the jar loosely (place the lid on top without sealing it) and keep it in a warm, dark place for about 24 hours. 
Feed the starter on the next two days with another 60 g of flour and 60 g of lukewarm water each day. Stir well after each feeding. Place a rubber band around the jar to mark the level and observe how much it rises. 
When small bubbles appear and the mixture has visibly risen, your starter is active and ready to use for baking.
Note: Depending on the room temperature and the type of flour used, it may take 3 to 5 days until the starter becomes fully active, this is completely normal.

Preparing and baking the bread:
Add the sourdough starter to a bowl with water and mix well. Gradually add all of the flour until a smooth dough consistency is achieved. Sprinkle some salt over the dough and let it rest for 30 minutes. Then fold the dough three more times at 30-minute intervals. 
After that, the bread is ready to be baked. 
After baking, let the bread cool completely and enjoy it with your favorite sides.
Baking time: 20 minutes at 230 °C with the lid on, then another 30 minutes at 210 °C without the lid.
