Prepare the noodles and vegetables:
Cook the rice noodles according to the package instructions, rinse under cold water and drain well. 
Meanwhile, grate the carrot, slice the spring onions into rings and cut the cabbage into thin strips.
Combine the prepared vegetables with the cooled rice noodles in a large bowl.
Prepare the dressing:
In a small bowl, whisk together the tahini, honey, soy sauce, sesame oil, chili oil, lemon juice and a pinch of salt until smooth.
Mix and serve:
Pour the dressing over the noodles and vegetables and mix well until everything is evenly coated. 
Transfer the salad to a bowl or container and sprinkle with peanuts and sesame seeds. 
Serve cold or store in the refrigerator. This salad also works perfectly as a take-away meal or for meal prep.
