Dubai Chewy Cookie

Something different from chocolates for Valentine's Day: a melt-in-the-mouth sweet with a crunchy pistachio kadayif filling, gently coated in a soft cocoa marshmallow shell.

Ingredients

For approx. 8 Dubai Chewy Cookies

Quantity

  • 150 g marshmallows

  • 40 g butter

  • 2-3 tablespoons cocoa powder

  • powdered zucker

  • 50 g Kadayif

  • food colouring powder (optional, e.g. pink)

Preparation

Prepare the filling:
Thoroughly mix the toasted kadayif with the pistachio cream in a bowl. Shape the mixture into small balls and place them on a plate. Refrigerate the balls for about 15–20 minutes until they firm up.

Make the marshmallow dough:
Melt the butter in a pan over medium heat. Add the marshmallows and melt them, stirring constantly. Once the marshmallows are almost completely melted, add the cocoa powder and 2–3 tablespoons of powdered sugar, mixing well until combined. Turn off the heat and let the mixture cool briefly until it is still pliable but no longer hot.

Shape the cookies/balls:
Generously dust your work surface and hands with powdered sugar to prevent sticking. Take slightly larger portions of the marshmallow mixture and flatten them. Place one chilled pistachio-kadayif ball in the center and gently wrap the marshmallow mixture around it, shaping it into a round ball.

Decorate & finish:
Mix powdered sugar with pink decorative powder or food coloring as desired. Roll the finished Dubai Chewy Cookies in the mixture or lightly dust them.
