Prepare the yogurt-cookie mixture:
Stir the yogurt with coffee, vanilla, or lemon juice as desired. Then place half of the yogurt into a dish or bowl and press the first layer of cookie pieces vertically into the yogurt. Spread the remaining yogurt on top and press in another layer of cookies vertically so that they slightly stick out.
(The cookies will later absorb the yogurt and create the typical cheesecake-like texture.)
Cooling:
Cover the dish and refrigerate the yogurt-cookie mixture for at least 6 hours, ideally overnight.
Serve:
Before serving, dust with cocoa powder if desired or garnish with fresh fruit, cookie crumbs, honey, or chocolate sauce. Enjoy the cooled “Yogurt Cheesecake” directly from the dish.
