CAST IRON PANS
Before first use, cast iron pans must be seasoned. During this process, a natural non-stick layer is created by oil and heat. While this layer is not as strong as Teflon or ceramic, it is more durable and can be refreshed at any time.

Here we show you two possible methods (gas & induction) that you can easily replicate at home.
- Wash the pan with hot water and plenty of dish soap. Dry it thoroughly.
- Place the pan on the stove and add about 1 cm of vegetable oil (e.g. sunflower oil, not olive oil) to the pan.
- Gradually heat your cast iron pan until the oil starts to shimmer.
- Carefully swirl the oil so that the rim is also slightly seasoned.
- Pour the oil into a heat-resistant container and wipe the pan lightly with a cloth/paper towel (do not make it completely dry!).
- Place the pan back on the stove and let the remaining oil season in to optimize the result.
- The pan is now ready to use.
KNIVES
High-quality knives are the most important foundation for precise and safe work in the kitchen. To ensure you enjoy them for a long time, proper care, storage, and sharpness are essential. After each use, knives should be cleaned by hand and carefully dried. For storage, we recommend knife blocks, magnetic strips, or knife rolls to protect the blades.

Overview of Grit Sizes: 240 - Pre-grinding of very dull knives or repairs | 1000 - Regular resharpening | 3000 - Fine grinding for perfect sharpness | 8000 - Polishing & finishing
- Soak the whetstone in water for 10–15 minutes (until no more air bubbles rise).
- Hold the knife at a 10–20° angle to the whetstone.
- Keep the stone moist throughout the sharpening process.
- Draw the knife back and forth over the stone with light pressure.
- Do not remove the sharpening slurry (powder), it supports the process.
- After sharpening: rinse the knife thoroughly and dry it.
Sharpening Course & Gift Voucher
Learn the art of the Japanese V-grind with whetstones in our knife sharpening course. The course takes place in our stores in Leipzig, Berlin, Günthersdorf, Erfurt and Hamburg, lasts about 30–60 minutes and costs €30 per person. Cleaning
Knives should be cleaned with lukewarm water and a sponge after each use and dried immediately. They should not be placed in the dishwasher, as salts and heat can damage the steel. Food residues such as mustard or horseradish should also always be removed immediately to prevent damage to the steel.
Storage
Knives should always be stored safely and out of the reach of children. The best options are a knife block, a magnetic strip, or a knife roll. Blades should never be left loose in drawers to avoid damage.
CUTTING BOARD
The cutting board is a hygiene zone, as food is prepared and cut on it that will later be eaten. Therefore, germs always form on it.
With increasing use, dirt and germs penetrate deeper into the cuts, making the board more difficult to clean. Visually, this can be recognized by discoloration of the board and unpleasant odors. Instead of disposing of a high-quality board, you can have it professionally restored.
