Prepare the sourdough starter:
Mix 60 g of flour and 60 g of lukewarm water in a clean jar. Loosely cover the container (just place the lid on top, do not screw it shut) and leave it in a warm, dark place for about 24 hours.
When many small bubbles form and the mixture has clearly risen, the starter is active and ready to use for baking.

Prepare the bread dough:
Place the sourdough starter in a bowl with water and mix well. Then gradually add all the flour until a smooth dough forms. Sprinkle some salt over the dough and let it rest for 30 minutes. After that, fold the dough three more times at intervals of 30 minutes.

Shape the bunny:
Place the finished dough on a lightly floured work surface.
- Cut off about 1/5 of the dough from the bottom and set this piece aside.
- Make cuts on the left and right sides of the lower part of the dough (from top to bottom), without cutting the pieces off completely.
- Fold these cut sections backwards and downward – they will form the bunny’s legs.
- Next, cut off a piece of dough from the top left and right – these will become the ears.
- Score each ear piece lengthwise down the middle and place them on top of the body.
- Using kitchen string, loosely tie around the upper part of the dough (including a small part of the ears) and tighten slightly to form a head.
- From the previously removed dough, shape: small balls for the arms and one slightly larger ball for the tail.
- Attach everything to the body and press lightly so the pieces hold during baking.
Baking:
Preheat the oven to 230 °C and place a tray filled with water on the lower rack of the oven. Bake for 10 minutes at 230 °C, then reduce the temperature to 180 °C and continue baking for 30–45 minutes. Allow the bread to cool completely after baking.
Serving:
Slice as desired and enjoy with sweet or savory toppings. 🐰✨
