Roast the Peppers:
Halve the peppers, remove the seeds and place them cut side down on a baking tray lined with parchment paper. Roast in a preheated oven at 180 °C (top and bottom heat) for about 20 minutes, until the skin darkens slightly and the peppers are soft.
Prepare the Dressing:
While the peppers are roasting, whisk together balsamic vinegar, olive oil, honey, mustard, salt, and pepper in a bowl until you have a smooth, homogeneous dressing.
Cook Pasta and Prep Vegetables:
Cook the pasta according to the package instructions until al dente. Remove the roasted peppers from the baking tray and carefully slice them into strips.
Assemble the Salad:
Place the pasta and pepper strips in a large bowl. Thinly slice the peeled onion and add it to the salad. Pour the dressing over it and mix everything well. Then divide the salad onto plates, top with burrata, and season with salt and pepper to taste.
Baking time: 20 minutes at 180 °C (conventional heat)
Preperation time: approx. 35 minutes (incl. baking time)
