Roast the Peppers:
Halve the peppers, remove the seeds and place them cut side down on a baking tray lined with parchment paper. Roast in a preheated oven at 180 °C (top and bottom heat) for about 20 minutes, until the skin darkens slightly and the peppers are soft.
Prepare the Dressing:
While the peppers are in the oven, whisk together balsamic vinegar, olive oil, honey, mustard, salt and pepper in a bowl until the dressing is smooth and well combined.
Cook Pasta and Prep Vegetables:
Cook the pasta according to the package instructions until al dente. Slice the roasted peppers into strips. Peel and finely dice the onion.
Assemble the Salad:
In a large bowl, combine the pasta, pepper strips, diced onion and dressing. Mix well. Place the burrata on top, season with salt and pepper, and serve immediately.
Baking time: 20 minutes at 180 °C (conventional heat)
