Prepare the base:
Whisk the eggs in a deep plate. Dip both sides of the rice paper in the egg so that it is completely coated. Then place it on a baking tray lined with baking paper. Using a fork, fold the edges inwards slightly and press down to create a small, stable rim.
Proofing & pre-baking:
Spread the tomato pesto on the base and arrange the sliced mozzarella on top. Bake in a preheated oven at 180 °C (fan oven) for 7–8 minutes until the cheese has melted slightly.
Add topping:
Meanwhile, slice the salami sticks. Remove the pizza from the oven, top with salami and basil leaves, and bake for another 7–8 minutes until the crust is golden brown and crispy.
Garnish:
Remove the finished pizza from the oven and sprinkle with freshly grated Parmesan cheese. Allow to cool briefly and enjoy.
