One model is made of porcelain, the other of marble. Both materials are non-abrasive, taste-neutral, and easy to clean. The porcelain mortar is even dishwasher safe. The pestles fit comfortably in the hand and have roughened ends to make it easier to crush spices, herbs, peppercorns, or nuts. Speaking of nuts: why not crown your fillet with a crust of pitted olives, capers, oregano, paprika, and macadamia nuts?
