Roasted Asparagus on Burrata

A delicious recipe for roasted asparagus on creamy burrata that will delight you with its fresh flavours. This light dish is ideal for spring or summer.

Ingredients

Serves 1

Quantity 

  • 200 g asparagus 

  • 2 burrata 

  • 2 garlic cloves 

  • 1 tbsp seasame seeds 

  • 1 tsp chili flakes 

  • ½ lemon 

  • 1 tsp honey 

  • 3 tbsp olive oil 

  • salt, pepper

Preparation

Preparation & baking:
Spread the asparagus evenly on a baking tray. Drizzle with 2 tablespoons of olive oil and sprinkle over the sesame seeds, chili flakes, chopped garlic, a little lemon zest, salt and pepper. Toss everything gently so the asparagus is well coated in the seasoning. Bake in a preheated oven 20 minutes at 200 °C (Top/bottom heat) until tender and slightly golden.

To serve:
While the asparagus is baking, mix the lemon juice, honey and the remaining 1 tablespoons of olive oil in a small bowl. Place the burrata on a plate, gently tear it open and spread it slightly. Arrange the roasted asparagus on top and generously drizzle with the lemon-olive oil mixture. Serve immediately and enjoy.

Baking time: 20 minutes at 200 °C (Top/bottom heat)

Preperation time: approx. 30 minutes (incl. baking time)
